Chia Pudding: take 1

So yesterday I promised you a chia seed pudding that wasn’t gross. Are you ready for the recipe??!

Yeah, me too.

I had my first attempt at chia pudding yesterday and brought it for lunch today. To make a long story short, my boss brought me mcdonalds for lunch today. I don’t even have a picture to show you because it honestly looks so gross I couldn’t even make it look edible enough for a picture.

Fun fact about chia seeds, they don’t instantly absorb lots of liquid. I had just assumed that as soon as I threw those bad boys in with my coconut milk they would swell up and viola! pudding! No such luck. Apparently it takes a little longer than that. But because I thought that my seeds were defective I doubled the amount that my recipe called for..oops! This morning I woke up to a mason jar full of some gray stuff similar to the consistency of gummy bears that had been left in the sun all day.

I’m going to try again tonight following this recipe somewhat more closely.

*makes one serving, adapted from A Beautiful Mess

  • 1/2 cup coconut milk
  • 2 tbsp chia seeds
  • 1 tbsp + a generous squeeze honey
  • 1/8-1/4 tsp vanilla
  • pinch of salt

put the coconut milk and honey in a microwave safe smallish mason jar and heat for 17 seconds, stir. Continue heating for 5 or so seconds at a time and stirring until most of the honey is melted in. Add the vanilla, salt, and chia seeds. Stir or shake and pop in the fridge!

    I don’t eat chia seeds because I will forever associate them with Chia Pets.
